Banana Puff Pastry

Puff pastry desserts are one of my favorite things to make because they taste straight out of a bakery but require minimal effort. The combination of flaky pastry, sweet bananas, and rich peanut butter creates a delightful treat that is perfect for any occasion. This recipe is simple and quick, making it a great choice for both novice and experienced bakers. The added touch of maple syrup, cinnamon, and vegan butter enhances the flavors, while the dark chocolate and powdered sugar topping give it a professional finish.

Ingredients

  • Puff pastry
  • Maple syrup
  • Banana
  • Peanut butter
  • Cinnamon
  • Vegan butter

To Top

  • Melted dark chocolate
  • Powdered sugar

Directions

  1. Prepare the Puff Pastry: Start by cutting the puff pastry into rectangles, each approximately 3 by 5 inches in size. This size is perfect for individual servings and allows for even baking.
  2. Slice the Banana: Take a ripe banana and slice it into pieces about 1/4 inch in thickness. The thickness ensures that the banana will become soft and slightly caramelized during baking without becoming mushy.
  3. Assemble the Filling: On a lined baking sheet, drizzle a small circle of maple syrup where each puff pastry piece will go. Place the banana slices on top of the maple syrup circles. Sprinkle a pinch of cinnamon over the bananas, and then add a small dollop of peanut butter on each banana slice. This combination will create a delicious, gooey filling.
  4. Cover with Puff Pastry: Lay the cut puff pastry rectangles over the banana and peanut butter filling. Use a fork to press and seal the edges of the pastry. This helps to encase the filling and prevents it from leaking out during baking. Brush a small amount of melted vegan butter on top of each pastry to help it brown and become crispy.
  5. Bake: Preheat your oven to 400°F (200°C). Bake the pastries for about 10-12 minutes or until they are golden brown and puffed up. Keep an eye on them towards the end of the baking time to prevent burning.
  6. Add the Toppings: Once the pastries are baked and slightly cooled, drizzle some melted dark chocolate over the top. This adds a rich and decadent flavor that complements the sweetness of the filling. Finally, dust a light layer of powdered sugar over the pastries for an elegant finish.
  7. Enjoy: Serve the banana puff pastries warm. They make an excellent dessert or a sweet treat for any time of day. The combination of flavors and textures will make it hard to stop at just one!
