One Pot Creamy Beef Pasta

This dish was absolutely amazing! It’s not only delicious but also family-friendly and healthy. After seeing make this pasta, I knew I had to try it myself. The result? A meal my whole family loved, and one I’ll definitely be making again!

Ingredients:

  • 1 onion
  • 250g 5% mince beef
  • 1 red pepper
  • 1 tsp garlic granules
  • 1 tsp paprika
  • 1 tsp oregano
  • 1 tbsp tomato puree
  • 1 tin of tomatoes
  • 500ml chicken stock
  • 250g rigatoni pasta
  • 80g mascarpone
  • 10g fresh parsley

Method:

  1. Sauté the Onion and Beef:
  • Start by frying the onion until softened.
  • Add the mince beef and cook until browned and fully cooked.
  1. Add Vegetables and Herbs:
  • Toss in the red pepper, garlic granules, paprika, and oregano.
  • Cook for another minute to blend the flavors.
  1. Incorporate Tomato and Pasta:
  • Stir in the tomato puree, tin of tomatoes, chicken stock, and rigatoni pasta.
  • Mix well to ensure everything is evenly distributed.

  • Cover the pot and cook on low heat for 15-20 minutes.
  • Stir regularly to prevent the pasta from sticking and ensure it cooks evenly.
  1. Finish with Creaminess:
  • Once the pasta is tender, add the mascarpone and fresh parsley.
  • Stir thoroughly to combine and achieve a creamy texture.
