Orange Tofu Tacos

These tacos really pack a punch of flavor with sweet, sticky orange tofu, charred corn, and a creamy avocado sauce. Here’s how you can make this delicious and vibrant dish:

Ingredients

For the Tofu:

  • Tofu: 450g, firm variety
  • Olive oil: 3 tablespoons
  • Cornflour: 50g

For the Tofu Glaze:

  • Orange juice: Juice of 1 orange
  • Sriracha: 1.5 tablespoons
  • Soy sauce: 2 tablespoons
  • Tomato purée: 1 tablespoon
  • Maple syrup: 1 tablespoon

For the Charred Corn:

  • Corn: 100g, charred by placing in a hot frying pan with no oil

For the Avocado Sauce:

  • Avocado: 1 ripe avocado
  • Lime juice: Juice of 1 lime
  • Cilantro: Small bunch, fresh
  • Water: 40ml
  • Salt and pepper: To taste

For Garnishing:

  • Lettuce: Fresh, shredded
  • Tomatoes: Sliced
  • Spring onions: Sliced
  • Chilli slices: Fresh, for a bit of heat
  • Sesame seeds: Toasted, for a nutty crunch

Method

  1. Prepare the Tofu:
  • Cut the tofu into small cubes and coat them evenly with the cornflour. Heat 2 tablespoons of olive oil in a pan over medium-high heat. Add the tofu cubes and cook until they are golden and crispy on all sides. Once cooked, remove the tofu from the pan and place it on a sheet of kitchen paper to drain any excess oil.
  1. Make the Tofu Glaze:
  • In the same pan, combine the orange juice, sriracha, soy sauce, tomato purée, and maple syrup. Heat the mixture over medium heat, stirring occasionally, until it begins to thicken. Return the tofu to the pan and stir gently to ensure that each piece is thoroughly coated with the glaze.
  1. Prepare the Avocado Sauce:
  • In a blender, combine the avocado, lime juice, cilantro, water, salt, and pepper. Blend until the mixture is smooth and creamy. Adjust the seasoning to taste.
  1. Char the Corn:
  • Place the corn kernels in a dry, hot frying pan. Toast them over medium-high heat, stirring occasionally, until they are lightly charred and smoky in flavor.
  1. Assemble the Tacos:
  • Take a soft taco wrap and spread a spoonful of the avocado sauce evenly over the surface. Add a layer of shredded lettuce and tomato slices. Next, spoon on some of the charred corn and the glazed tofu.
  1. Garnish:
  • Finish off each taco with a sprinkling of spring onions, fresh chilli slices, and toasted sesame seeds for added flavor and texture.
