Strawberry Honey Tarts with Lemon Curd

Ingredients:

For the Crust:

  • 1 ¾ cups flour
  • ¾ tsp sea salt
  • 1 ½ tsp sugar
  • ½ cup chilled, cubed butter
  • 1 tsp vanilla extract
  • ¼ cup + 2 tbsp cold water

For the Filling:

  • 2 cups sliced strawberries
  • 1 cup vanilla yogurt
  • 1 tbsp honey
  • 2 eggs
  • 3 tbsp sugar
  • 1 tsp vanilla extract

For the Lemon Curd:

  • 3 eggs
  • ½ cup lemon juice
  • 1 cup sugar
  • ¼ cup lemon zest
  • 6 tbsp unsalted butter
  • Pinch of coarse salt

Directions:

  1. Make the crust: Mix dry ingredients, cut in butter, add vanilla and water. Press into pan, refrigerate, then bake.
  2. Prepare the filling: Mix yogurt, honey, eggs, sugar, and vanilla. Pour over baked crust, add sliced strawberries, and bake.
  3. Make lemon curd: Whisk eggs, lemon juice, sugar, and zest. Cook until thick, stir in butter, strain, and cool.
  4. Spread lemon curd over cooled tart and refrigerate.
