Ingredients:

  • 5 tbsp salted butter (prepared using the brown butter method)
  • 1 1/4 cups all-purpose flour
  • 1/4 tsp baking soda
  • 1 egg (at room temperature)
  • 1/2 tbsp vanilla bean paste
  • 1/4 cup granulated sugar
  • 1/2 cup light brown sugar
  • Biscoff spread
  • Dark chocolate chips
  • Milk chocolate chunks

Directions:

  1. Prepare Biscoff Centers:
  • Line a baking sheet with parchment paper.
  • Scoop about 2 teaspoons of Biscoff spread to create 8 small balls.
  • Place these balls in the freezer to harden.
  1. Make Brown Butter:
  • In a saucepan, melt the butter over low heat, stirring continuously until it turns a rich brown color and develops a nutty aroma.
  • Remove the butter from the heat and let it cool to room temperature.
  1. Mix Wet Ingredients:
  • In a large mixing bowl, combine the cooled brown butter, granulated sugar, brown sugar, and vanilla bean paste. Whisk until smooth and creamy.
  • Add the egg to the mixture and whisk until fully incorporated.
  1. Combine Dry Ingredients:
  • Gradually add the flour and baking soda to the wet mixture.
  • Stir in the dark chocolate chips and milk chocolate chunks until evenly distributed.
  • Cover the dough and refrigerate for at least 30 minutes, or up to overnight for best results. Chilling the dough overnight will yield thicker and chewier cookies.
  1. Preheat and Prepare:
  • Preheat your oven to 350°F (175°C).
  • Line a baking tray with parchment paper.
  1. Form Cookies:
  • Using an ice cream scooper, portion out the cookie dough.
  • Press a frozen Biscoff ball into the center of each dough ball, ensuring it is fully covered by dough.
  • Place the dough balls on the prepared baking tray, spacing them about 2 inches apart.
  1. Bake:
  • Bake the cookies in the preheated oven for 11-15 minutes, or until the edges are golden brown and the centers are set.
  • Remove the cookies from the oven and allow them to cool on the baking tray for a few minutes before transferring them to a wire rack to cool completely.
  1. Enjoy:
  • Serve the cookies with a cold glass of milk and enjoy the delightful combination of Biscoff and chocolate in every bite!
