Chocolate Raspberry Tart

– ¼ cup raspberry compote

Method :

Crust:
1. In a food processor, combine the flour, cocoa powder, sugar, and salt.
2. Add the diced butter and pulse until the mixture resembles coarse crumbs.
3. Mix in the egg yolk, then gradually add ice water until the dough comes together.
4. Press the dough evenly into a 9-inch tart pan with a removable bottom and refrigerate for 30 minutes.

Baking:
1. Preheat your oven to 375°F (190°C).
2. Bake the chilled crust for 20 minutes, then remove it from the oven and allow it to cool completely.

Layering:
1. Once the crust has cooled, spread a thin layer of raspberry compote over the bottom.
2. Arrange fresh raspberries evenly on top of the compote.

Ganache:
1. Heat the heavy cream in a small saucepan until it just begins to simmer.
2. Pour the hot cream over the dark chocolate chips in a bowl and let it sit for 5 minutes.
3. Stir the mixture until smooth, then pour the ganache over the raspberries in the tart.
4. Refrigerate the tart until the ganache is set, approximately 2 hours.
