Chicken Tortellini Pasta

  • 1 lb chicken breast, diced

  • 2 cloves garlic, minced

  • 1 red bell pepper, sliced

  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 lb cheese tortellini
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped for garnish

Directions:

  1. Heat olive oil in a large skillet over medium heat. Add diced chicken breast and cook until browned.
  2. Add garlic, onion, red bell pepper, and mushrooms. Cook until vegetables are tender. Season with Italian seasoning, salt, and pepper.
  3. Pour in chicken broth and heavy cream. Bring to a simmer and cook for a few minutes.
  4. In a separate pot, cook tortellini according to package instructions. Drain and add to the skillet with chicken and vegetables. Mix well.
