Cheesecake Graham Cracker Cups Recipe

This is a wonderful recipe for Cheesecake Graham Cracker Cups! These mini cheesecakes are perfect for any occasion – creamy, delicious, and very satisfying.

Ingredients:

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup melted butter
  • 2 (8 oz) packages cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/4 cup sour cream
  • Fresh berries for topping

Instructions:

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a small bowl, mix together the graham cracker crumbs and melted butter until well combined. Press about 1 tablespoon of the mixture into the bottom of each cupcake liner.
  3. In a large bowl, beat the cream cheese and sugar together until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and sour cream until fully incorporated.
  4. Divide the cream cheese mixture evenly among the cupcake liners.
  5. Bake for 15-18 minutes, or until the cheesecakes are set but slightly jiggly in the center.
  6. Allow the cheesecakes to cool completely in the muffin tin before refrigerating for at least 2 hours.
  7. Top with fresh berries before serving. Enjoy!
