Tropical Blackened Shrimp Tacos

Ingredients:

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons blackening seasoning
  • 2 tablespoons olive oil
  • 1 ripe mango, peeled and diced
  • 8 small flour tortillas
  • 1 avocado, thinly sliced
  • 1/4 red cabbage, finely shredded
  • 1/4 cup cilantro, chopped
  • 1 lime, cut into wedges
  • Salt, to taste

Directions:

  1. Coat the shrimp evenly with blackening seasoning.
  2. Heat olive oil in a skillet over medium-high heat. Cook the shrimp until opaque, approximately 2-3 minutes per side.
  3. Warm the tortillas according to package instructions.
  4. Assemble the tacos by placing shrimp on each tortilla, followed by avocado slices, diced mango, shredded cabbage, and chopped cilantro.
  5. Squeeze lime juice over the tacos and season with salt to taste.
  6. Serve immediately with extra lime wedges on the side.
